How to Make Yummy Fudge

Fudge is high on the list of our most popular homemade candies. It's a splendid gift from the kitchen and an indulgent treat for any occasion.

The trick to good homemade fudge is to cook the ingredients to the right temperature to form a sugar syrup, and cool the mixture properly so the texture of the fudge turns out smooth and firm, but soft enough to cut. Here's how to make fudge on your stovetop and in your microwave.


3 cups sugar
1 bag semi-sweet Chocolate Chips
3/4 cups (1 1/2 sticks) butter or margarine
1 small can (5 oz.) evaporated milk (about 2/3 cup)
1 jar (7 oz.) Jet-Puffed Marshmallow Creme
2 tsp. Vanilla
2 cups pecans, chopped (optional)


Combine 1 1/2 sticks of butter with 3 cups of sugar in a heavy saucepan.

Add 2/3 Evaporated Milk to butter-sugar and stir.

Stir on Medium to High heat until it reaches 234 degrees F with a candy thermometer.

Add chocolate chips. : D Still on burner.

Things move very fast from this point forward. Have your chocolate chips ready to pour, your marshmallow creme open, and your vanilla and teaspooner ready.

Remove from heat. Add 2 tsp. vanilla. Add marshmallow creme. STIR REALLY FAST, and DON'T STOP! Use wooden spoon (also good for beating small children), no electric appliances allowed, it ruins the taste. Beat until smooth. Really smooth. Like Lou Rawls' voice.

If you add nuts, now is the time. Blanch in oven at 350 for 5 minutes, then remove and add to fudge mixture.

Pour fudge (with or without pecans) into buttered pan. Smooth over with spatula if desired. Sprinkle pecans on top (optional).

Let cool after pouring, but do not refrigerate until it has completely set up.
